Taco Bowls

I absolutley ADORE the inspired flavors and ingredients in tacos! Cumin, paprika, chili powder, salsa, chilies, and tomatoes…LOVE!! Tacos are a go-to meal that I cook, in some variation, every single week as my family loves Taco Tuesdays!! Today I am sharing TACO BOWLS as it’s back to school for the kiddos and between after school activities, homework, and more this is the perfect dish because it’s easy to be individually crafted to fit your family. Just add whatever toppings you have in the refrigerator. My family loves tomatoes, olives, avocado, salsa, and shredded carrots. It’s quick, easy, and filled with plenty of nutritious ingredients like veggies, greens, and protein. 
Sunday evenings, I typically cook a few pounds of ground meat and multipurpose throughout the week with breakfast scrambles, toppings for lunch, or just a mid-morning or afternoon snack.  I vary the type of meat each week, choosing lean ground beef, ground turkey, chicken or pork. For this particular recipe, I used ground beef, but feel free to choose whatever meat your family desires. I also developed a taco seasoning recipe with the ingredients I love.  I make this in bulk and keep in a sealed container which will stay fresh for up to six months.  One tablespoon of taco seasoning to one pound of meat.  I add ¼ cup of water or broth to the mixture. This recipe is gluten-free, Paleo and Whole 30.

Ingredients

Taco Bowl Ingredients

  • 1 pound ground beef turkey or chicken
  • 1 tablespoon taco seasoning; recipe below
  • ¼ cup water
  • 2 cups cauliflower rice cooked
  • 8 tablespoons bibb or romaine lettuce leaves
  • 1 tablespoon Toppings: pico de gallo salsa, avocado, tomatoes, onions, peppers, olives

Taco Seasoning Ingredients

  • 6 tablespoons chili powder
  • 4 tablespoons cumin
  • 2 tablespoons paprika
  • 2 tablespoons chipotle powder
  • 4 teaspoons oregano
  • 4 teaspoons garlic powder
  • 4 teaspoons minced onion
  • 2 teaspoons coarse ground black pepper
  • 2 teaspoons Kosher salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon coriander

Instructions

Taco Bowl Instructions -Yields 4 servings

  • Brown meat in a large saute pan on medium-high heat. Stir in 1 tablespoon taco seasoning and ¼ cup water. Bring to a boil. Reduce heat and simmer 5 minutes, stirring occasionally until liquid is absorbed.
  • Line serving bowl with Bibb lettuce leaves. Layer ground meat, cauliflower rice and toppings of your choice. Serve immediately.

Taco Seasoning Instructions- Yields 1 1/2 cups

  • Combine ingredients in an airtight container, close lid and shake.
